In the oven method, I'm not sure what you mean by rotate the trays (not the chicken.) Do you mean flip the whole set-up like an upside-down cake? Or do you mean turn the whole thing around so that what was towards the back of the oven is now in the front? Thank you for a response!
Ciao! Yes, it means you have to turn the whole thing around, so that what was on the back now is at the front. You do not have to move the chicken, just the pans!
My mouth is watering, reading this recipe. I haven’t made pollo al mattone in years, and last recipe was on the stovetop and definitely a messy business. I’m going to make this as soon as I can bear to turn the oven up high!
