Loved this! Made this exactly as written. So much different than "American" Egg Salad with sweet gherkins and celery. But next time, I will reduce the amount of paprika, use just a sprinkle or maybe even omit it. My mayo looked pink after using the called-for smoked paprika amount, not like your picture with a whitish mayo. Also, nice change of pace when one is trying to reduce sugar intake! Not sure it would be a hit with my husband, but he really liked it.
