It finally feels like Summer is here! After a terribly dreary and rainy Spring in Brittany (the rainiest since 1983, as per the news), the return of sunny days could not be more welcomed and needed. We’re finally getting to enjoy the outdoors and we even had our first picnic in the park yesterday.
The abundance of summer produce on market stalls brings a wide smile to everyone’s face, and I am so excited to get back to cooking all the fresh tomatoes, leafy greens, zucchini, eggplants and more!
So, as we begin Summer, today’s recipe is a great one for your outdoor dining or picnics. Here is the Trouchia - a thick and succulent omelet studded with parmesan, crunchy pine nuts and loaded with Swiss chard and fragrant fresh basil.
