A fuss-free and healthy fish dish that’s on the table in 30 minutes is always a keeper, especially in the thick of Summer, when we don’t want to spend too much time in the kitchen! So today I am sharing with you one of my go-to recipes that fits the bill: a baked Fish à la Méditerranéene. It’s a simple fish recipe that yields big summer flavors such as sweet juicy cherry tomatoes, briny olives, salty capers, zesty lemon and fresh herbs.
I know many of you may be all about outdoor grilling right now, but with a timid start of summer here in Brittany, I am equally happy to stay inside and use my oven. That said, I think a baked fish dish can be a perfect recipe for any time during Summer as well!
Baking fish is a relatively simple and straightforward cooking method. It requires minimal preparation and can be left unattended in the oven, allowing you to focus on preparing side dishes, other components of the meal or just spending some time outside!
If you’ve ever been intimidated by fish, or are worried to either undercook or overcook it (like I was), this recipe is a blessing!
The technique of cooking the fish fillets in the oven, nestled between juicy tomatoes and tucked under foil provides even heat distribution. The fish steams in its own juices as well as the tomato juices, ensuring it cooks thoroughly, without ever getting dry. It’s succulent and juicy, every time!
It's a dish that’s simple enough for a busy weeknight, but definitely elegant enough to serve at a weekend gathering too.
